Easy Dill Cucumber Salad

I’m starting to feel like I need to dedicate Fridays to food. It does have a nice ring to it…Food Day Friday? Let’s go with it.

Well summer is quickly coming to an end. I have no idea where the time has gone! Although, I am one of those pumpkin persons…So I am ready for all things fall now that we are approaching that wonderful season. 

Seriously do you know where 2020 has gone? Oh! Pandemic, that’s right. During our “lockdown” I decided to try my hand at gardening again. I say again because the first year I tried to grow one I had a little critter that ate the entire garden! This little guy left nothing behind. Ate.The.Whole.Thing!

We planted all sorts of things this year and it looked so beautiful and I treated it just as well as I treat my kids haha. I water it, weeded it, I was out there every day. 

We had so much dill that I had no idea what to do with it. When I planted it I really wasn’t sure what people even used it for. I researched everything dill. Since we had cucumbers in the garden and plenty of dill I whipped up this summer salad and its so good. Not only is it soooo good its healthy to! Because you know I still going strong on my healthy eating.

Everyone loves cucumbers right? You can do so much with them. Make pickles, sandwiches (yes I do eat a cucumber sandwich 🙂 ) drench them with vinegar, you name it!

You don’t really need anything special to make this summer salad. Maybe pair it with a burger? Grilled chicken. I’ve been pairing mine with salmon it goes well together. 

To make this salad chop your dill first. Then make your dressing and set it aside. I always just throw it in the fridge while Im cutting up the vegetables. 

Take your greek yogurt and mix it with the sour cream. Add in the fresh lemon juice, dill, and seasonings. Whisk it all together and set it aside. 

Go ahead and cut your cucumbers and add them to a large bowl. I have one of these slicers that I’ve been using a ton this summer. Once you finish with the cucumbers chop the onions and add them to the bowl of cucumbers.

Grab your dressing and pour it over the vegetables and give a quick toss! So easy right? After you mix everything together put it back in the fridge while you cook the rest of your meal. Unless this is your meal then just go ahead and dig right in!

 

Dill Cucumber Salad


A lot of cucumber salads feature a heavy coating of mayonnaise-based dressing. This lighter version adds a lot of flavor, without overwhelming the cucumber. If you prefer a thicker dressing, cut down on the amount of lemon juice in the dressing.  

 

Tip: Prepare the dressing advance, if possible, to give the flavors more time to develop.

Serves: 2-4

Dressing Ingredients:

1/3 c. Greek yogurt
1/3 c. sour cream
  T. fresh lemon juice
1 T. fresh dill, finely chopped
½ t. garlic powder
Salt and black pepper, to taste

Salad Ingredients:

2 large cucumbers, sliced and cut into half rounds
½  medium red onion, sliced thin
1 T. fresh dill, roughly chopped

Directions:

  1. Prepare the dressing by whisking all of the ingredients together in a medium bowl until thoroughly combined. Taste and adjust seasonings as desired. Set aside.
  2. Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl.  Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!
