Chocolate chunk cookies? Yes please! Do you just love a nice, warm, soft chocolate chip cookie fresh from the oven? Yeah, me too! I can’t be the only one who thinks its hard to find the most perfect chocolate chip cookie. Look no farther, I’ve got you covered!!
I have been on a quest to make the best chocolate chips cookies. I’ve tried recipes where the cookies fall flat and look sad. Don’t get me wrong, they still taste amazing but I want them fluffy. I want that perfect chocolate chip cookie. Ok, let’s be real I want the perfect cookie no matter what kind of cookie we are talking about. Sugar cookie, chocolate cookies, gingerbread, snickerdoodle, grinch, you name it- I want them soft and fluffy.
This chocolate chip recipes adds not only chocolate chips but chunks of chocolate as well. Cant go wrong there! This recipe does call for walnuts. If you have a nut allergy you can leave them out.
First, Take your chocolate bar and turn it into chunks. You can use a sharp knife to break it into chunks or put it in a ziplock bag and use a tenderizer to break it down. I go with the knife so the chucks are little bigger. Set this aside.
After you have broken up your chocolate bar go ahead and preheat the oven to 375 degrees. Line your baking sheets with parchment paper or a silpat. Set these aside until you are ready for them.
I usually combine the dry ingredients into a separate bowl since it makes it easier to add in at the same time. Take your small bowl and add in the flour, baking power, baking soda, and salt and set this aside until you are ready to add this dry mixture in.
If you have a kitchen aid stand mixer use this. It’s so much easier then using a hand mixer. Add in the vegetable shortening and butter. Cream this together for about a minute. Once this is creamed together add in your granulated sugar and brown sugar and let mix for about 2 minutes. You want it to look fluffy and creamy.
You should add the eggs one at a time. Between each egg make sure it is fully mixed in with the batter. After you have added the eggs go ahead and add the vanilla and make sure everything is mixed well. If you need to stop the mixer and scrap the sides do that now.
Take your bowl of dry ingredients and add it little by little. I usually break the dry ingredients into thirds. You only want to mix this until there is no more dry flakes. About a minute. Really, you do not want to over mix.
Now it’s time for the best part!! Usually I’ll take the mixing bowl off the kitchen aid stand and stir in the chocolate chips, chocolate chunks, and walnuts by hand. I do this until they are just mixed in.
I use an ice cream scoop to make the cookies uniform in size. If you want bigger cookies use a bigger scoop. I use a 1 inch scoop. Make sure you space the cookies about 2 inches apart on the cookie sheets. Bake for about 10-12 minutes. Let them cool on the baking pan for about 1-2 minutes and then let them cool the rest of the way on a wire rack or parchment paper on the counter. Enjoy 🙂

Chocolate Chunk Cookies With Walnuts
Prep time: 15 minutes
Baking time: 10-12 minutes
Yield: 24 cookies
*Make smaller cookies with a small dough scoop (yields 48 cookies).
Ingredients:
- ½ c. vegetable shortening
- ½ c. unsalted butter
- 1 c. granulated sugar
- 1 c. brown sugar, packed
- 2 large eggs
- 2 t. vanilla extract
- 3 c. all-purpose flour
- 1 t. baking powder
- 1 t. baking soda
- ½ t. salt
- 1 c. chocolate chips
- 3-oz. dark chocolate bar, chopped
- 1 c. walnuts, chopped
Directions:
- Preheat oven to 375°F and line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat. Set aside.
- Cream shortening and butter with granulated and brown sugars in a large mixing bowl. Mix in eggs and vanilla extract until well blended.
- Add in flour, baking powder, baking soda, and salt. Mix to combine.
- Fold in chocolate chips, chopped chocolate and walnuts until thoroughly combined.
- Use a large cookie dough scoop to make 24 balls of dough. Place 6 balls of dough on the prepared baking sheet with 1-2 inches in between each ball. Flatten dough with the bottom of a glass.
- Place in pre-heated oven and bake 10-12 minutes or until golden brown and cooked through. Remove from oven and cool slightly before serving. Enjoy!Â
