Um.. I don’t know about you but I love everything about sweet potatoes! They are just so yummy to me. I mean, I know it helps make them even sweeter when you cover them in all sorts of goodness.
But these sweet potatoes were soooo good that I couldn’t decide if they needed to be an appetizer, side dish, or just an amazing dessert. I definitely could eat these for breakfast, snack, dinner, any time!
These came out just like a candied dish. I plan to have these on Thanksgiving but again, Im not sure at what point to serve them. Most likely as a dessert option since they are soaked in butter and maple syrup and roasted with marshmallow.
These were almost like a sweet potatoes pie without the crust! I’m drooling just thinking about these. You can see how these are just baking right in that butter and syrup. I know these pictures probably don’t look like they would be that good but you have to whip up a batch of these. They were seriously super easy and heaven to my taste buds!
I just peeled the sweet potatoes cut them up and poured melted butter and maple syrup over them. Baked them and then added the marshmallow at the end. Any easier? Nope!
I really wish that my every day job could be cooking and baking. I love it. It makes me happy and for me I feel like its a stress reliever. Not sure why….but seriously, I just love it.
Go ahead and try these out for yourself! You may just fall over at how good these are just like I did!
Ingredients:
2 Sweet Potatoes
1/4 Cup Melted Butter
Maple Syrup
Marshmallows
How To Prepare:
- Preheat oven to 375 and line a baking sheet with aluminum foil.
- Peal sweet potatoes and cut into 1/4 inch slices
- Melt butter in microwave
- Lay the potatoes on baking sheet and drizzle the melted butter over them. Flip them to make sure all potatoes are covered in butter
- Drizzle the Maple Syrup over the buttered potatoes and flip and drizzle again.
- Bake in the over for 10 minutes. Flip them and bake for another 10 minutes
- Remove the sweet potatoes from the oven and set oven to Roast at 375
- While the oven is preheating to Roast, cut the marshmallows in have and place them on top of the baked sweet potatoes.
- Place back in oven and roast for 3-5 minutes.
